We are seeking a talented and innovative Sous Chef specializing in Pastry to join our culinary team in Baghdad, Iraq. As a key member of our kitchen leadership, you will play a crucial role in creating exceptional desserts and pastries while maintaining our high standards of quality and presentation. - Assist the Executive Pastry Chef in overseeing daily pastry kitchen operations and staff management
- Collaborate with the culinary team to develop innovative dessert menus and specials, incorporating local and international flavors
- Ensure consistent quality and presentation across all pastry and dessert items
- Train and mentor pastry kitchen staff, assigning specific duties and providing guidance as needed
- Monitor and maintain proper food storage, handling, and safety standards in the pastry section
- Work closely with the Executive Chef to manage food costs and minimize waste in the pastry department
- Participate in inventory management and ordering of pastry supplies and ingredients
- Conduct regular quality checks on pastry items to ensure they meet our high standards
- Contribute to menu planning and recipe development, with a focus on creating unique dessert experiences
- Adapt recipes and techniques to incorporate local ingredients and cater to regional preferences
- Step in for the Executive Pastry Chef when necessary
Qualifications
- Minimum of 5 years of experience in a similar role, preferably in a high-volume kitchen
- Strong technical knowledge of classic and modern pastry techniques
- Expertise in various pastry and dessert preparation methods, including baking, sugar work, and chocolate crafting
- Knowledge of Middle Eastern pastries and desserts, with the ability to incorporate local flavors into international recipes
- In-depth understanding of food safety regulations and hygiene standards
- Demonstrated creativity in dessert menu planning and food presentation
- Strong leadership and team management skills
- Ability to work efficiently under pressure in a fast-paced environment
- Excellent organizational and time management skills
